Onion Rice

Ingredients
- 1cup long-grain white rice
- 1cup onionminced
- 2-1/2cups water
- 1tbsp olive oil
- 1tbsp butter
- 1tbsp chicken bouillon(or any flavor bouillon)
Instructions
- In a large skillet over MED-HIGH heat, melt butter with olive oil.
- Stir in rice to coat with butter & oil. Stirring constantly, slightly toast rice until rice begins to turn opaque and butter begins to turn golden brown.
- Stir in water and bouillon, bring to a boil.
- Cover with lid, lower heat to LOW.
- Simmer on LOW for 15 minutes until most liquid has been absorbed.
- Lift lid, quickly sprinkle minced onion evenly over the top of the rice, and cover immediately (do not stir).
- Continue to cook covered on LOW for 8 minutes. Shut off heat, let sit until ready to serve.
- Fluff with fork before serving. Serves 4.
